Two of Solaire Resort North’s signature restaurants, Finestra and Yakumi, come together for the first time in an exclusive dining collaboration titled “The Code of Umami.” The four-hands dinner takes place on October 17 at Finestra and offers guests a one-night-only opportunity to experience the artistry of two celebrated chefs who have elevated the dining scene in the north.

This rare dinner is priced at Php 4,988++ per person, with an optional Php 1,888++ wine and sake pairing. The menu is designed to celebrate harmony, contrast, and culinary storytelling, giving diners an evening that balances tradition with innovation.

Chef Joel Manchia of Finestra

Chef Joel Manchia, Chef de Cuisine of Finestra, brings more than 20 years of international experience. His career spans Europe, Asia, and the Americas, including leadership positions in Four Seasons properties in Houston, London, Beijing, and Hampshire. Before joining Solaire Resort North, he also held the role of Executive Chef at The Ivy Asia in Brighton.

At Finestra, Chef Manchia introduces a style that combines world-class technique with approachable warmth. His cooking reflects a global perspective shaped by decades of exposure to diverse culinary traditions. For “The Code of Umami,” he showcases how Italian flavors can adapt and complement the intricacies of Japanese cuisine.

Chef Cristian Asato of Yakumi

Chef Cristian Asato, Chef de Cuisine of Yakumi, draws on his Japanese heritage and training across the globe. His culinary path began in Lima and expanded in Tokyo, where he immersed himself in Japanese craft. His experience includes working in Japan, Hong Kong, Switzerland, and the Middle East. He has also held senior roles at Mandarin Oriental, The Alpina Gstaad, and Soneva in the Maldives.

At Yakumi, Chef Asato is recognized for his mastery of Nikkei cuisine, where he blends Japanese tradition with international influences. His approach honors technique while infusing each dish with a soulful and modern edge. For this collaboration, he brings refined Japanese precision to the table, complementing Chef Manchia’s Italian foundation.
